Act One

An old fire station, slowly undone.

We took the building the long way around. One year of drawings. Six months of plaster. Three months to decide where the candles would sit.

Noctis occupies the stable yard of the Nørrebro fire station, built in 1891 and closed in 1998. The original wall of smoke-blackened brick remained, and so did the oak ceiling beams. Everything else was removed. The twelve-seat counter was carved from a single piece of Danish ash felled on Lolland the winter before we opened.

Twenty-four candles are lit before every service. There are no electric lights above the table.

Act Two

Four cooks, one fire, no shortcuts.

Everything that reaches the counter is finished in front of you. There is no walk-in freezer. There is no plate warmer. There is one wood fire and a six-burner Molteni.

The team arrives at 10:00 and leaves at 23:30. The menu is written on Monday and rewritten by Thursday morning. If the catch at Hundested is wrong, the menu moves.

We buy from twenty-four producers inside two hundred kilometres of the kitchen door. We cook the way we were taught, slowly, carefully, and without music.

Act Three

An evening, in order.

You arrive at 18:30. You sit at the counter. You stay until 23:00.

18:30 · a glass of champagne at the small bar in the courtyard. 19:00 · the twelve seats are called. 19:15 · the first snacks arrive, five of them, in a sequence. 20:00 · the second act, four plates. 21:15 · the main sequence, three. 22:15 · petits-fours, coffee, and if the night is right, a glass of something quiet.

There is no dress code. There is no corkage. The music is the room.

Act Four

Mikkel Hald, and the two cooks who stayed.

Mikkel cooked at Fäviken for three winters, then Noma for two, then Alchemist for a year. He opened Noctis with Lena Søbye and Rasmus Barfod on 12 September 2021 — three cooks, twelve chairs, no backers, no PR.

"We don't want to be a restaurant that people go to once. We want to be the place a few people come back to every autumn, for the rest of our working lives."

The three have cooked every service together since the opening night. The kitchen has not lost a cook in three years. The dining room still has the eight original candlesticks Lena found in a flea market in Flensburg the week before opening.
